Depending on the kind of riding that you’ll be doing, you will require a sole that provides you enough amount of grip. Softer soles would have the tendency to grip footpeg better, but would wear down faster. Harder soles would have better durability, but provide you less grip. Either way, see to it that the soles are resistant from oil, particularly with street riding. Buildup of oil on the roads may be the downfall of the rider if they are not wearing boots with oil resistant soles, particularly in wet conditions.
